BBQ Emu Fan Fillet

Emu Fan Fillet is the prime cut from the emu, and highly sought after by some of the top restaurants around our region and state. Fan Fillet can be cooked whole and then thinly sliced for serving (see photo) However my favourite method of serving is by slicing and cooking on the BBQ or in a hot pan. One Fan Fillet will serve 3-4 people.

Slice Fan Fillet across the grain in approx. 1cm thick slices. Place in a very hot pan which has been lightly greased, or on a lightly greased BBQ plate.

Cook on high heat until the cutlets have changed colour about ½ way up the side of each piece. Turn over and continue to cook until juices start to rise to the surface. Remove from heat and serve immediately with your choice of hot vegetables or salad.

The whole cooking process for BBQ Fan Fillet takes only about 5 minutes, so have everything else prepared before hand. The trick is to only turn the meat once, and remove it as soon as the juices rise.
